These crispy tuna patties are great served with a squeeze of lemon and a dollop of fat-free Greek yogurt.

Ingredients

  • 4 3oz cans tuna, in water
  • 4 egg whites
  • 16 Wheat Thins crackers, crushed
  • ¼ cup grated carrot
  • ¼ cup chopped water chestnuts, capers or diced red pepper
  • 1 Tbsp minced onion, if tolerated
  • Pepper, dill and dried mustard, to taste

Directions

  • Mix all ingredients together
  • Form mixture into eight patties with hands
  • Spray medium skillet with nonstick cooking spray and place over medium heat
  • Cook patties until golden brown on both sides, 2-3 minutes per side
